Effects of rising hygienic demands in the farming and food sector

The new EU hygiene package came into force on January 1, 2006. The aim of these legal regulations is to protect consumers better than before against hygiene-related health risks from the consumption of food. The research project investigates whether this improved protection will succeed. For this purpose, the project team analyzes the relevant legislation on food hygiene, the development of structures in the agricultural and food industry as well as health risks using the example of salmonella in pork production. Finally, using this example, the possible effects on food hygiene of the introduction of the EU hygiene package are examined and evaluated with regard to the consumer protection goal of largely eliminating health risks from food consumption.
